Reiko Hashimoto

Reiko Hashimoto was born in the ancient capital of Japan, Kyoto, and grew up with a food fanatic mother who continues to influence Reiko’s love for traditional Japanese flavours today. After studying English Literature at university, Reiko travelled the world for work, picking up fusion dishes and nurturing her understanding of food from all over the world. With this knowledge, Reiko decided to make a career from cooking and teaching and set up her business, Hashi Cooking, in London.

That was 14 years ago; in this time Reiko has taught thousands of students to create delicious and authentic Japanese dishes, from scratch, in a Western kitchen. While Reiko has taught chefs of Le Cordon Bleu, many students are complete beginners, which means Reiko’s recipes are accessible and easy to follow – debunking the myth that Japanese cookery is complicated.

Through her school, Reiko has developed a close following and now also teaches in catering schools, restaurants, exclusive members clubs and luxury hotels worldwide. Meanwhile, Reiko has appeared on television programmes such as Good Food Live and The Great British Kitchen as a guest chef, and has been named a finalist in the ‘People’s Choice’ category of the British Cookery School Awards.

In 2011, Reiko took her passion for teaching a step further, producing her first cookery book, Hashi: A Japanese Cookery Course , a definitive book on how to cook Japanese food at home. Her second book, Cook Japan, Stay Slim, Live Longer focuses on another aspect of life that is incredibly important to Reiko, health and wellbeing, all through beautifully presented and – most significantly – delicious dishes.
